It’s Taco Tuesday! AND  Tasty Tuesday!  What better day to do share a healthy FAMILY RECIPE for a Taco Bowl Bar!  My kiddos and hubby love this!  It is great for family dinners and for girls nights!  It is easy, quick and a perfect addition to your weekly menu plan…and it’s Fix approved!

Ingredients:

4 Chicken Breast

1 lb ground turkey (I use venison)

2 tbsp Taco Seasoning

1 cup Salsa (21 Day Fix salsa is perfect for you fixers 🙂 )

3 roma tomatoes

1 white onion

1 stalk green onions

cilantro

lettuce

1 avocado

1 can black olives

Plain greek yogurt

1 cup brown rice or quinoa

2 cups water

1 can organic corn

1 can organic black beans

 

Instructions:

Crock Pot Salsa Chicken:

  • Add chicken to your crockpot
  • Add salsa
  • Cook on low 6 hours

Rice:

  • Place 2 cups water in sauce pan and bring to boil
  • add rice/quinoa and reduce to low heat
  • cover and simmer for about 20 minutes or until rice is cooked through
  • Place in bowl with Taco Bar

Taco Meat:

  • Defrost ground meat
  • add to fry pan and brown thoroughly
  • add taco seasoning and mix well
  • Add to bowl for Taco Bar

Beans and Corn:

  • Open both cans and drain
  • Add to microwave safe bowl
  • Microwave on high 3 – 4 minutes
  • Place with Taco Bar

Chop all veggies and place in bowls or on plates for a completed Taco Bar

Serve with greek yogurt in place of sour cream!

Create your Bowl!

*Optional:

  • Tortilla Chips
  • Shredded Cheese
  • Organic Sour Cream
  • Salsa
  • Guacamole
  • Tortillas

1 Green, 1.5 Red, 1 Blue, 1 Yellow (if you eat the rice or quinoa)
