THE BEST Healthy Deviled Eggs and How to Make Them Pop! 

Healthier deviled eggs for Easter Brunch 👊🏻 

If you are anything like me you love a good comfort food with a healthy spin, and you love brunch.  Well here is the best of both worlds…a healthy take on a delicious deviled egg and a perfect brunch addition! Just in time for Easter Sunday! 
  
Recipe: 

– 12 hard boiled, chilled organic eggs – peeled and halved 

– remove yolks and place in bowl

Mix yolks together with:

– 1/2 cup Greek Yogurt

– 2-3 tsp Yellow Mustard

– 1 tbsp Whole Grain Mustard

– 1 tbsp organic cayenne pepper

– dash of Worcestershire

– 1 tbsp champagne vinegar

– 1 tbsp dark brown sugar

– 1.5 tbsp organic Dill Weed

– Minced onion to taste (about a tbsp) 

– Pink Himalayan Salt and Pepper to taste
– Add filling to plastic zipper baggie 

– Cut corner off of bag and pipe filling into eggs

– sprinkle with cayenne pepper or paprika

    -top with crisp turkey bacon crumbles 😍

For a dash of added Easter fun you can Dye your egg whites like Easter Eggs 😂

– Fill 1 cup or bowl for each color you would like, with 1/2 cup warm water

– Add 2-3 drops of food coloring to each cup

– Add 3 tbsp vinegar to each cup

– Stir

– Drop 2-4 hard boiled egg halves in each color and allow to absorb color for 1 minute 

– Remove eggs from coloring cups and place on a paper towel 

-Allow to dry for 5 minutes then pat excess moisture off with a clean paper towel 

– Fill with delicious deviled egg filling and enjoy! 

  

Apple Sausage Heaven in a Pan

Sometimes you just need a good wholesome comfort food on a rainy day… This one pan Apple Sausage dish is heavenly and perfect, and a treat the whole family can enjoy!

 

Here’s what you will need:

1 tablespoon olive oil
1 pound chicken apple sausage (brats, or your other favorite low sodium sausage can easily work 😉), sliced
1 large onion, chopped
3 cloves of garlic, minced
1 apple, chopped
3 cups low sodium chicken broth
1 (14.5 oz) can of tomatoes with green chilies
1/3 cup almond milk
10 ounces pasta (I used whole grain penne.)
salt and pepper to taste
1/2 cup blend of Monterey Jack cheese, mozzarella and Parmesan or and 1 of the 3, shredded

In a large skillet, add olive oil and set the temperature to medium high heat. Add in the onions and sausage and cook for about 5 minutes until brown. Then, put in the garlic and apples, cooking for about another minute.

Next, add the chicken broth, canned tomatoes, almond milk, pasta, salt, and pepper. Stir to combine. Bring the mixture to a boil stirring until past is fully cooked.

Eeduce heat to low, add cheese to the pasta. Stir to combine.

Serve up, dish up and enjoy, because you may not have many leftovers! 😉

Clean Eating Lettuce Wraps!

Eat like you love yourself, feed your soul and your body with clean and healthy food that doesn’t bore your family or your palate!  Try these ahhhhmazing 21 Day Fix approved lettuce wraps for a boost in your menu and meal prep this coming week!

 

Clean Eating 21 Day Fix Approved Lettuce Wrap Recipe!

Ingredients:
1 tsp. coconut oil
1 lb lean ground turkey breast – I substitute for Ground Venison or Chicken Breast
½ medium onion, chopped
½ medium red or green bell pepper, chopped
1 clove garlic, finely chopped
1 green onion, chopped
⅔ cup chopped water chestnuts
1 Tbsp. reduced-sodium soy sauce
1 Tbsp. seasoned rice vinegar
2 Tbsp. chopped fresh cilantro
1 large head of lettuce (like leaf, romaine, or bibb), separated into leaves

Preparation:
1. Heat oil in medium saucepan over medium-high heat.
2. Add turkey, onion, and bell pepper; cook, stirring frequently, for 4 to 6 minutes, or until turkey is cooked through and onion is translucent.
3. Add garlic, green onion, water chestnuts, soy sauce, and vinegar; cook, stirring occasionally, for 2 to 3 minutes, or until most of the liquid has evaporated.
4. Add cilantro; mix well. Remove from heat.
5. Evenly spoon mixture onto lettuce leaves; wrap the leaves around mixture, and eat!

Optional Sauce for Serving:
Added soy sauce or sriracha upon making your wraps!
