Apple Sausage Heaven in a Pan

Sometimes you just need a good wholesome comfort food on a rainy day… This one pan Apple Sausage dish is heavenly and perfect, and a treat the whole family can enjoy!

 

Here’s what you will need:

1 tablespoon olive oil
1 pound chicken apple sausage (brats, or your other favorite low sodium sausage can easily work 😉), sliced
1 large onion, chopped
3 cloves of garlic, minced
1 apple, chopped
3 cups low sodium chicken broth
1 (14.5 oz) can of tomatoes with green chilies
1/3 cup almond milk
10 ounces pasta (I used whole grain penne.)
salt and pepper to taste
1/2 cup blend of Monterey Jack cheese, mozzarella and Parmesan or and 1 of the 3, shredded

In a large skillet, add olive oil and set the temperature to medium high heat. Add in the onions and sausage and cook for about 5 minutes until brown. Then, put in the garlic and apples, cooking for about another minute.

Next, add the chicken broth, canned tomatoes, almond milk, pasta, salt, and pepper. Stir to combine. Bring the mixture to a boil stirring until past is fully cooked.

Eeduce heat to low, add cheese to the pasta. Stir to combine.

Serve up, dish up and enjoy, because you may not have many leftovers! 😉
