Best Veggie and Chicken Stir Fry – Sodium Free!

Tonight for dinner: Veggie and Chicken Stir Fry with soba noodles!
Recipe: great with or without the noodles, and delicious served with brown rice
Spice mix:

2 tbsp ground ginger

2 tbsp garlic powder

2 tbsp onion powder

2 tsp red pepper flakes

*mix together in a bowl and set aside*
– Add about 2tbsp coconut oil to your wok and heat on high, add: 1/2 Spice mix
– add 3 thawed and sliced chicken breasts
– cook on high until cooked through
-remove chicken from wok and set aside
– add 1 more tbsp of coconut oil to the wok and heat
– add your sliced veggies of choice

I use: Sliced mini sweet peppers, a sliced onion and tomatoes – other great options I have tried are zucchini, broccoli, snap peas, carrots and celery
– add 2 tbsp minced garlic
– Cook on high 3-4 minutes
– add noodles (optional)
– cook 3 more minutes
– add the other half of the seasoning and the chicken back into the wok and cook for about 1-2 more minutes on high
Serve while hot and enjoy!
ADDITIONAL NOTE to those following the Fix Portion Plan like me:

Soba Noodles are made out of buckwheat, which is an approved Fix portion food BUT these are not technically on the list of approved foods, I choose to use them anyway rarely and portion is key! I load up my plate with veggies and chicken first and then add about 1/2 yellow container to my meal and count it as a full yellow just to be safe ๐Ÿ™‚

The choice is of course personal where to moderate items like this and what works for your family, I do not recommend using items that are not made from ingredients on the approved list at any time ๐Ÿ™‚

Oven Nachos – Fix Approved

If your kiddos are anything like mine they are CONSTANTLY asking for food. As if I don’t feed them? As if they didn’t just eat an apple, a sandwich, a bowl of cereal, a string cheese, 5 strawberries and about 15 other things…as if.

Well, this afternoon they were begging (literally begging) me for something MORE to eat! ……I of course said “drink a glass of water and wait 5 minutes” I mean, I don’t want to raise over-eaters but I also don’t want to not feed a hungry child! So while they waited their 5 minutes, I glancedย at the clock… It was 525pm! ย And I don’t know about you, but if I haven’t started dinner, let alone started thinking about dinner, yet at 525pm, all may as well be lost and we can call our very favorite delivery kid from the friendly neighborhood Bellagios or we can expect to pull all our hair out dealing with starving children who somehow morph into an angry pack of screaming wolves if dinner is served after 630pm!

So I had to think quick to avoid the slippery slope that is take out, not to mention the poor kids were totally right to be hungry, it was dinner time!

Open the freezer, HAAAALELUJAH! Ground Turkey to save the day…and the rest is history ๐Ÿ˜‰

Oven Nachos are the quickest, healthiest, tastiest most incredible thing I have up my sleeve. All you need is:

  • 1.5 lbs Ground beef
  • 1 Serving of my salt and sugar free Taco Seasoning
  • 1 can of Organic Black Beans
  • 1 Cup Shredded Cheese of your choice (I use mexican blend)
  • Shredded Lettuce
  • 2-3 Diced Tomatoes
  • 1 Diced Onion
  • 1 Diced Avocado
  • 1 small can Sliced Olives (for the kids ๐Ÿ˜‰ )
  • Greek Yogurt or Sour Cream
  • Tortillaย Chips (I use whole grain chips from Costco)

Step 1:

Preheat the oven to 375*

Step 2:

Brown the ground turkey in a skillet, add taco seasoning and cook through. Add half the diced onion to the meat and simmer for 3 minutes.

Step 3:

Spread the can of black beans over the bottom of your oven safe casserole dish

Step 4:

Top the beans with the cooked meat

Step 5:

Top with Cheese

Step 6:

Place on middle rack of oven for 12 minutes or until cheese is melted

Step 7:

While cooking, dice up veggies

Step 8:

Upon removing from the oven, top with lettuce, tomatoes, onion, avocado, and olives

Serve while hot with greek yogurt/sour cream and tortilla chips!

 

Enjoy and repeat often!
